Cod Gourmand


600 grams of dried cod soaked

50 g butter or margarine

1 can of peeled tomatoes

3 onions, garlic and parsley, all chopped

a pinch of saffron

salt and pepper


Well drained salt cod, cut it into pieces, cover with cold water, place over heat and shut off just begins to boil.

After 10 minutes, drain them and remove skin and bones.

In a skillet lightly brown the chopped onions, garlic and parsley, add tomatoes, salt, pepper and saffron and cook for 15 minutes, then add the cod and cook for another 15-20 minutes.

The sauce will thicken.
